I am in the process of applying for a trademark in one country; can I do the other countries afterwards or does it have to be done now?

You can apply in additional countries at any time. There is no requirement to file in multiple countries simultaneously.

If you file in a second country within six months of your original application date, the Paris Convention allows you to claim your original filing date as the priority date in the new jurisdiction. This means you are treated as if you had filed in both countries on the same day, which protects you against anyone who filed a similar mark after your original application date.

After the six-month priority window closes, the new application uses its own filing date, which means any similar marks filed in that country between your two application dates would have priority over you in that jurisdiction.
